For the crust, mix the dry ingredients in a medium size bowl.
Stir in Pasolivo Lemon Olive Oil until just combined. This will create a lumpy dough. Press into the bottom of an 8x8 baking pan. Then press flat and prick with a fork 15-20 times.
Bake for about 20 minutes until crust is golden.
Mix the filling mixture and carefully pour over the baked crust.
Bake for 30-35 minutes until set and the edge is just turning brown. Let cool for 45 minutes, then sift with powdered sugar. Cut into 16 bars.
