Savory Bread Pudding

This hearty and savory bake is the ultimate make-ahead dish—perfect for holiday mornings, weekend brunches, or feeding a crowd with ease. With rich sausage, aromatic herbs, and melty Gruyère, it’s comforting, flavorful, and guaranteed to impress. Just prep it the night before, pop it in the oven, and enjoy a stress-free, delicious meal.

Ingredients

  • 1 lb Italian loaf, cut into 2" cubes
  • 1 tbsp Pasolivo California Extra Virgin Olive Oil
  • 6-8 scallions, with the white and light green parts sliced thin, dark green tops set aside
  • 1 lb mild Italian sausage, casings removed
  • 2 tsp Pasolivo Herbes de Provence
  • 8 large eggs
  • 3 cups whole milk
  • 1 cup heavy cream
  • 8 oz Gruyere cheese, grated- about 2 cups, divided use

Preparations

  1. Lightly oil a 9x13 baking dish and set aside
  2. In a skillet over medium heat, warm the Pasolivo California Extra Virgin Olive Oil
  3. Add the scallions and sausage. Cook, breaking up the meat, until well browned- about 5 minutes. Remove from heat and stir in the Pasolivo Herbes de Provence
  4. In a large bowl, whisk together the eggs, milk, heavy cream, and 1 1/2 cups gruyere cheese
  5. Add bread cubes and sausage mixture, and mix well
  6. Pour mixture into the 9x13 baking dish, cover with plastic wrap, and refrigerate at least 4 hours or overnight
