Our olives are hand-harvested to protect fruit integrity (no mechanical harvesters here), then cold-pressed within hours for maximum flavor and health benefits, like high polyphenol content. Every drop of oil is stored in sealed, temperature-controlled stainless steel vats to prevent oxidation. We bottle in small batches to ensure every product meets our high standards of flavor and freshness.
Why does this matter? Olive oil is one of the top five most fraudulent foods in the U.S. With little FDA oversight, especially on imported oils, consumers often unknowingly purchase mislabeled or low-quality oils. At Pasolivo, we control every step of production, from tree to bottle, offering full transparency and ensuring you’re getting true, premium extra virgin olive oil.
Certified Extra Virgin
Our oils are proudly California Olive Oil Council (COOC) Certified, earned through rigorous testing that exceeds international standards. After harvest, every oil is submitted for both chemical and sensory analysis:
- Measures acidity, freshness, and purity to verify proper handling, storage, and milling processes. No chemicals or heat are used in our extraction.
- The COOC Taste Panel conducts blind taste tests, ensuring our oils have the fresh fruitiness of true extra virgin oil and are free from defects like bitterness or mold, which signal poor-quality fruit or processing errors.
Only oils that pass both tests can display the COOC Seal. This guarantees you’re enjoying 100% California-grown, authentic extra virgin olive oil.
Extra Lab-Testing
Beyond certification, our oils undergo independent lab testing to monitor every batch of oil for freshness, purity, and health benefits:
- Antioxidant-rich oils with powerful health properties.
- Tested for an ultra-low acidity (under 0.05%) to hold up better to heat than standard oils, with a smoke-point of 420 degrees.
- While typical store-bought oils last 2 to 3 years, our oils have a tested shelf-life of 3 to 4 years when stored properly.
- Tested for low peroxide levels (less than 15 meqo2/kg), an indication of exposure to heat, light, and oxygen at the time of production.
These extra tests aren’t required for extra virgin certification, but they’re part of our promise to deliver the highest quality olive oil possible.
Real Flavor, No Infusion
Every flavored oil from Pasolivo starts as true extra virgin base and retains its health benefits, rich polyphenol content, and premium quality. We focus on co-milling and hand-blending, preserving both quality and safety. Our flavored oils are made with one of these methods:
- Fresh ingredients, like basil or jalapenos, are crushed right alongside the olives during milling to naturally extract pure, vibrant flavor.
- Natural oils, extracted from fresh ingredients like Meyer lemon zest or rosemary, are carefully blended into our small-batch extra virgin oils by hand—never mass-produced.
At Pasolivo, you’ll never find infused olive oils. Why? Infused oils often start with lower-quality base oil and add flavoring later, sometimes with heat. This process can compromise freshness and even pose health risks, like the potential for botulism, when fresh ingredients aren’t handled properly.
Premium Packaging
Our award-winning oils are bottled in hand-painted, black UV-protected glass to block nearly all damaging light, preserving both flavor and nutrients. Unlike store-bought oils packaged in clear plastic, squeeze bottles, or basic green glass, our packaging protects against light, heat, and oxygen—the main causes of olive oil spoilage. Plastic is especially harmful, as it allows oxygen to seep in and can leach chemicals that accelerate rancidity.
Each Pasolivo bottle comes sealed with an airtight cork, with self-sealing Pour Spouts available for purchase.
