Sweet Potato Hummus

Level: Easy | Prep Time: 15-20 minutes | Cook Time: 5 minutes | Serves: 1 bowl

This sweet potato hummus is sweet, savory and creamy. It's easy to make and perfect for serving with carrots, cucumbers and chips.

Ingredients

  • 1 large sweet potato, cooked and mashed
  • 1 can of chickpeas, drained
  • 1/2 cup of aquafaba reversed from chickpeas
  • 1/4 cup tahini
  • Juice from 1 lemon
  • 3 tablespoons Pasolivo Classic Extra Virgin Olive Oil
  • 3 cloves garlic, roughly cut
  • 1-1/2 teaspoons sea salt
  • 2 teaspoons ground cumin
  • 1 tablespoon Pasolivo Garlic-Lemon Olive Oil
  • 2 tablespoons of crispy fried onions, crumbled

Preparations

  1. Add all ingredients except Pasolivo Garlic-Lemon Olive Oil and onions to food processor
  2. Purée until smooth
  3. Drizzle with Pasolivo Garlic-Lemon Olive Oil
  4. Sprinkle with onions
  5. Serve with sliced veggies or crackers
  6. Enjoy!
